Fill a balloon with air and tie it off. Then dunk it into liquid nitrogen, or pour liquid nitrogen over it, to cool the gas inside. As it cools, the balloon will shrink and appear to deflate. When allowed to warm back up, the balloon will expand again as the air inside returns to its original volume.
